Executive Chef Gabriel Kolofon

Executive Chef Gabriel Kolofon combines his classical culinary training with Latin and South American influences to apply a refreshing, worldly spin on Midwest comfort food at Hoyt’s Chicago.

After graduating from the BUE Trainers Center of Professional Education in Gastronomy in Buenos Aires, Chef Kolofon honed his technique at fine-dining restaurants in his home country of Argentina. In 2003, Kolofon moved to Mexico and spent several years in Puerto Vallarta and Los Cabos working his way up through the kitchens of major hotel properties. In 2008, he was appointed chef de cuisine at the Capella Pedregal resort in Los Cabos and was integral in operating the property’s two restaurants, Don Manuel’s and the Beach Club Kitchen.

Chef Kolofon made the move to the US when he took the helm at the Capella Telluride in Colorado. As executive chef, he helped boost the property’s image as a luxury vacation spot with an immaculate attention to service in the haute alpine restaurant Onyx and the upscale Suede Bar and Banquets. While Kolofon worked at Capella Telluride the hotel was recognized in Travel + Leisure and earned a four-diamond rating from AAA.

At Hoyt’s Chicago, Chef Kolofon focuses his menu around fresh, regional ingredients in crowd-pleasing shared plates and reimagined classic entrées. With tempting desserts and an extensive beverage menu, Hoyt’s is the ideal joint for business-professional neighbors and Windy City visitors alike.
